Foodie Heaven In Spain- Pan Con Tomate
I love how every country I visit has its own way of serving breakfast and their own traditions in culturally specific foods. This was no different when I visited Spain. My favorite breakfast item I found at every hotel I stayed throughout Spain was the ‘pan con tomate’ spread. It is a tomato spread placed on a piece of toast with garlic, olive oil and a dash of salt.
I’ve seen it served as a tomato type paste ready to spread and I’ve also seen it offered where you take the actual tomato sliced in half and spread it directly on the bread. I found the paste to be tastier. Here is one recipe to prepare the paste.
Serves: 2 cups
- In a large pot, heat oil. Saute onions and garlic for 1-2 minutes, then add tomatoes, salt and pepper. Stir to combine.
- Simmer uncovered on medium heat for about 60 minutes, stirring every 8-10 minutes. As the mixture reduces by about half the liquid, a thicker sauce will form. When this occurs, set heat to low and stir more frequently to avoid burning.
- Serve with fresh or toasted bread slices or pita.
